David Clark Schlitterbahn’s
Shrimp Haus Restaurant
On many occasions this local business man and volunteer, along
with the business entity he represents, has stepped forward to assist with many
Chamber and community events, offering friendly advice and excellent service.
Exceeding expectations is what this individual does best. Our business community
is fortunate to be able to call him “one of us”. As I understand
it he came to the Rio Grande Valley from Scotland with the Ladbrook Corporation
to be the Food and Beverage Manager at Valley Race Park, when the Race Park closed,
he moved with Ladbrook Corporation to Oakland, California AND when the Valley
Race Park reopened he returned to the Valley. In 2001, as an invited
guest at the grand opening party for Schlitterbahn Beach Waterpark and Shrimp
Haus Restaurant, he was overheard, by a local un-named Sysco Food Service Rep.,
to have said something like “I would like to have this type of job”. Well it became
a “be careful what you wish for” situation, because 3 weeks later David Clark
became the food and beverage director at Schlitterbahn. David’s
strength is organization and with his calm “can do” attitude he helped to save
the Chamber’s Ladies Kingfish Tournament this year when we were scrambling to
pull it together following Hurricane Dolly. Please join me in recognizing David

Chamber’s 2008 Volunteer of the Year. |
